A MICHELIN Guide restaurant, by the water

By the Mediterranean since 1948, Maison de Bacon has become a fine-dining restaurant. Since 2021, chef Nicolas Davouze creates seafood cuisine here that is demanding yet clear. Each plate starts from one product: a fish from the day’s catch, a shellfish, a local vegetable. The chef cooks it precisely and pairs it with light sauces, to keep the taste of the sea. The story of the place and its wood-fire grilled fish are told on this page: Bacon Restaurant.

In the evening, the L’Esprit du Soir menu

In the evening, the chef offers L’Esprit du Soir, a multi-course menu at €138, served to the whole table. The meal opens with a Provence herb brioche to share and an amuse-bouche of the moment. Today it continues with a Mediterranean amberjack tartare with citrus, a cep tartlet, then turbot roasted in the Josper oven with autumn truffle. A hibiscus granita introduces the pastry chef’s desserts. For €60 more, a wine pairing accompanies each course.

At lunch, L’Esprit du Midi and the à la carte menu

At lunch, L’Esprit du Midi menu offers a starter, main course and dessert of your choice for €74. At the moment, Mediterranean sea bass roasted in the Josper oven comes with a stuffed courgette flower and an aniseed emulsion. On weekdays, the Express version, main course and dessert, costs €49. Would you rather build your own meal? The à la carte menu offers caviar, prime fish grilled over a wood fire and the house bouillabaisse.
